Ladurée Macarons

I have been making macarons for a little over a year now. These marvelously delicious, fabulous delicacies are complicated to make, but 100% worth the effort! And the truth is I haven’t met anyone that doesn’t LOVE them! So I thought today (which is Macaron Day)  I’d share a little of their history….

Ladurée is the French Pâtisserie, founded in 1862, responsible for creating the Macaron… It was here where Pierre Desfontaines decided to take two macaron shells and join them with some kind of yummy filling.

“These small, round cakes, crisp on the outside, smooth and soft in the middle, are made every morning in Ladurée’s “laboratory”. The pastry chefs measure out very precisely the required amounts of almonds, eggs and sugar, before adding one final ingredient, a pinch of unique “know-how”, essential to the making of such a delicacy. Once cooked and filled, the macarons are put to one side for 2 days before going on sale, the time it takes to achieve a perfect balance between texture and flavour.” Ladurée’s History of the Macaron

So after 150 years, macarons from Ladurée are still the worlds best, but Sweetie Pie macarons are pretty good too :)
